I think inside the repo we should set the plugin version as 0.0.0-dev or something like that.

The version string should automatically be set from a git tag in the release publish workflow. Only the jar compiled by the workflow and published in the release will have a release version.

Additionally (if possible), it would be great if new releases are automatically published on Modrinth (and/or SpigotMC) using their respective APIs
